    We met while working on opposite sides of the ‘house’ at the wonderful Hamersley’s Bistro in Boston. Soon thereafter we set our course for Rhode Island and opened the doors of Chez Pascal in March of 2003. The restaurant is constantly evolving with the ebb and flow of local, seasonal produce; taking cue from the fantastic farmers who inspire us and remaining true to classic, thoughtful food. the truck Hewtin’s Dogs Mobile Food Truck was created in 2008 as a result of Matt’s incessant fascination (passion) for making sausages and curing meats. It was an extension of our beloved Hot Dog Cart that was located in the park across the street from the restaurant in weather permitting months. The Truck was designed to feature our House Made Sausages, Sandwiches and Cured Meats, changing frequently like the restaurant menu, based on what is in season. It developed a wonderful loyal following (to which we are most grateful). In 2012 we opened the wurst kitchen and as a result retired the truck. However, you can still get our house made sausages, sandwiches etc, all the wonderful things you knew and loved from the truck. But now you’ll always know where we are. the wurst kitchen The Wurst Kitchen is a small open kitchen located in Chez Pascal. This opened in 2012 and focuses on our house made sausages even more! About Nemo As proprietor and head chef, Nemo Bolin brings 15 years of restaurant experience to Cook & Brown. He began his career at L'Etoile restaurant on Martha's Vineyard, a French inspired fine dining establishment inside of a Relais and Chateau property. It was there, in his formative restaurant years, that he developed a love for the business and began honing his skills as a cook. After graduating from Union College with a B.A. in English Literature he realized his true passion was cooking and he subsequently enrolled in culinary school in Boston, MA. Since that time he has worked in some of the most highly regarded restaurants in Boston (No. 9 Park, Locke-Ober, Craigie St. Bistrot) and San Francisco (Rubicon, Chez Papa Resto). In addition he has worked in other areas of the food, hospitality and service industries to increase his knowledge and skill in all facets of restaurant management. These include managing a boutique wine store, baking and overseeing all kitchen staff at an American-style bakery and working as a production chef for a large catering company.
